Thanksgiving Leftover Sliders

Just like with my Leftover Ham Pot Pie, I love finding new ways to repurpose what’s left for a quick bite, and honestly, these sliders might actually be better than the original meal.
They’re so easy to make and also incredibly flexible. Swap in mashed potatoes, dip them in gravy, use ham instead of turkey, or throw in whatever leftovers you love most.
And the best part is they’re perfect for a crowd! Whether you’re hosting family all weekend or need something to snack on during the big game, these sliders are something everyone will love!

Okay, let’s be honest for a minute. It feels like the number of Thanksgiving meals multiplies every year. Between family celebrations, Friendsgiving gatherings, church events, and work potlucks, there’s practically a full holiday feast every weekend leading up to the real one. And while I love the season and all the memories that come with it, there are only so many plates of turkey, stuffing, and cranberry sauce a person can eat before things start to feel a little repetitive.
That’s exactly why I’m obsessed with fun leftover recipes like these Thanksgiving Leftover Sliders and my Leftover Ham Pot Pie. They let you repurpose all the extra food in a way that feels totally new, without having to cook another full meal from scratch (because let’s be honest, kitchen burnout is real this time of year). They’re quick, crowd-pleasing, and help make sure nothing goes to waste.

- Hawaiian Rolls: These sweet and fluffy rolls provide the perfect slider base. I usually use King’s Hawaiian, but any 12-count dinner roll works well.
- Turkey (or ham): Leftover cooked turkey or ham both work great. It can be sliced or shredded; just make sure it will lie somewhat flat, so you can layer the rest of the ingredients.
- Thanksgiving leftovers: For these sliders, I added cranberry sauce and leftover stuffing. Feel free to get creative here and use up whatever you have. I also dipped these sliders in leftover gravy when eating, and it was BOMB!!
- Cheese: You can use provolone, Swiss, cheddar cheese, Havarti, gruyere, white cheddar, etc. I’ve found that sliced cheese works best, but you can certainly shred your own cheese.
- Butter & seasonings: A mixture of melted butter, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, dried herbs, and salt and pepper gets mixed together to brush on top of these sliders. Then I sprinkled them with poppyseeds and a little freshly grated parmesan for extra flavor.

Step by Step Directions

Slice rolls
Without separating them, carefully slice the entire sheet of rolls in half horizontally and place the bottom half in the prepared pan.
Layer fillings
Mix the Dijon mustard and mayonnaise together and spread evenly on both cut sides of the rolls. Add a layer of cranberry sauce to the bottom rolls, followed by the turkey and stuffing. Lastly, add the sliced cheese and then place the top half of the rolls back on.
Add topping
Whisk together all ingredients for the topping. Brush the mixture over the tops of the rolls and sprinkle poppyseeds.
Bake
Cover with foil and bake 15 minutes, then uncover and bake 5-8 more minutes.
Slice & enjoy!!
Slice into individual sliders, serve with warm leftover gravy, and ENJOY!

- Make Ahead: You can assemble the sliders a few hours before baking. Simply cover and refrigerate them until you’re ready to bake. Note: since the rolls are cold and going into the oven to bake, the bake time might be slightly longer.

Storage / Freezing
- Fridge: These sliders are best served fresh and hot on the day of. However, if you do have leftovers, they will keep in the fridge for 3-4 days. Keep in mind that the longer they sit, the soggier they become.
- Freezer: Once cooled, wrap each slider individually in plastic wrap and then place in a resealable freezer bag or airtight container. Leftover Thanksgiving Sliders can last frozen for up to 2 months. Be sure to label them with the date so you can keep track of their storage time. Reheat in the air fryer or toaster oven until warm.

Thanksgiving Leftover Sliders
Ingredients
For the Sliders:
- 1 package 12 count Hawaiian sweet rolls or dinner rolls
- 2 Tbsp. Dijon mustard
- 2 Tbsp. mayonnaise
- 2-3 cups cooked turkey (sliced or shredded (or ham))
- 1½ cups leftover stuffing
- 1/2 cup cranberry sauce (spreadable layer)
- 6 slices cheese: you can use provolone, Swiss, cheddar cheese, Havarti, gruyere, white cheddar, etc.
- 1/2 cup gravy (optional, for dipping or drizzling)
To brush on top:
- 4 Tbsp. unsalted butter (melted)
- 1 tsp. Dijon mustard
- 1/2 tsp. Worcestershire sauce
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1 tsp. dried herbs (parsley, thyme or rosemary are all good options (or 1 Tbsp fresh))
- Pinch of salt and pepper
- Sprinkle of Poppyseeds
- Optional: 1 Tbsp. grated Parmesan for extra flavor

Instructions
- Preheat and prepare: Preheat the oven to 350°F (177°C). Lightly grease a 9×13-inch baking dish, or a quarter sheet pan works well too.

- Add meat and stuffing: Evenly layer the turkey (or ham), season the meat with salt and pepper, then a layer of the leftover stuffing.2-3 cups cooked turkey, 1½ cups leftover stuffing

- Top with cheese and rolls: Lay cheese slices evenly over the top. Place the top half of the rolls back on.6 slices cheese: you can use provolone, Swiss, cheddar cheese, Havarti, gruyere, white cheddar, etc.

- Mix the topping and brush: In a small bowl, whisk together all ingredients for the toppings. Generously brush the butter mixture over the tops of the rolls and sprinkle poppyseeds over the top.4 Tbsp. unsalted butter, 1 tsp. Dijon mustard, 1/2 tsp. Worcestershire sauce, 1/2 tsp. garlic powder, 1/2 tsp. onion powder, 1 tsp. dried herbs, Pinch of salt and pepper, Sprinkle of Poppyseeds, Optional: 1 Tbsp. grated Parmesan for extra flavor

- Bake: Cover loosely with foil and bake 15 minutes, then uncover and bake 5-8 more minutes, until golden brown and the cheese is melty. Remove from oven and garnish tops with a pinch of flaky sea salt (like Maldon). Start Timer

- Serve warm: Slice into individual sliders and serve with warm leftover gravy for dipping, or enjoy as is!1/2 cup gravy
