Pineapple Margaritas

Basically a must have beverage with Mexican food, errr any food really!

This drink has the right amount of citrus, sweetness from the pineapple juice and agave and a kick of heat at the end from the jalapeño. It’s a spicy/sweet combo that you’ll love.

Plus pineapple margaritas are so easy to make. They seem like a daunting cocktail to whip up, but they only take a few minutes to come together.

The fresh lime juice and sweet pineapple makes for one delicious, booze-less beverage that everyone can enjoy!

Ingredients you will need

You’ll be surprised at how few of ingredients you need to make this drink happen:

  • 100% Pineapple Juice
  • Fresh limes & fresh lime juice
  • Fresh Pineapple, cut into chunks
  • Agave Nectar
  • Fresh jalapeño
  • Kosher salt
  • Ice cubes
  • Sparkling water or Zevia ginger ale (optional)

How to make Pineapple Margaritas

It’s essential to muddle the pineapple, lime and jalapeño together in a cocktail shaker or sturdy mixing glass to release the juices and oils of all of those ingredients.

The remaining liquid gets poured into your drink and it’s amazing!

  1. Wet the rim of your glass with a slice of a juicy lime and gently rotate the rim into the salt to coat the edge of the glass evenly. Fill the glass with ice cubes and set aside.
  2. Then, gently muddle the pineapple, limes and jalapeño with some of the pineapple juice for ~30 seconds – 1 minute to release the juices and oils. Pour these juices (along with some of the jalapeño seeds if you really like it spicy) into your prepared cocktail glass.
  3. Add in the remaining pineapple juice, fresh lime juice and agave nectar. Give it a gentle stir. Add a splash of sparkling water (optional)
  4. Garnish pineapple margaritas as desired: lime wedge, pineapple chunk, jalapeño round.
    • Note: if you want to mix your kosher salt with paprika or ground pepper for the garnish on the glass, it’s a great touch!

Tools you will need to make margaritas at home

  • A cocktail shaker or sturdy mixing glass
  • Cocktail glasses. Low ball glasses, stemless wine glasses, martini glasses or a traditional margarita glass if you have them.
  • A muddler. Or, you can use the end of a wooden spoon.
  • A lime juicer is helpful, but not necessary.

Expert Tips

  • Be sure to muddle the ingredients for a good 30 seconds – 1 minute to release the juices and oils.
  • Use fresh ingredients.
  • Make these in advance! They can be stored 1-2 days in advance, without the ice in them.
  • Salt the rim of your glass with kosher salt. Sometimes I like to mix in paprika, pepper or Tajin into the salt and the rotate the rim into the salt. It adds a pop of color and tastes good too.
  • Make it a “skinny” pineapple margarita by omitting the agave. Add in a splash of sparkling water for some fizz.

This drink is both tart and sweet and has the perfect jalapeño kick! It’s a delicious & refreshing drink for your next girls night, happy hour or to celebrate Cinco de Mayo! 

Ingredients

Ingredients to muddle:

  • 2 oz. 100% pineapple juice
  • 1 lime quartered
  • 1/2 cup fresh pineapple chunks
  • 4 slices fresh jalapeño

Rest of ingredients for the drink:

  • 4 oz. 100% pineapple juice
  • 1/2 oz. blue agave or agave nectar
  • 1 lime juiced
  • Sparkling water or ginger ale (optional for fizz!)
  • Ice cubes

  • For the non-mocktail version: add in 2 oz. of tequila and 3/4 oz. triple sec!
