Table Talk with Tawnie
If you’re looking for one of those muffin recipes that uses every day ingredients and healthy enough to have for breakfast or pack in your kids lunch pale, this recipe is it! I like using the almond flour to keep the muffins incredibly moist, and a little cake flour goes a long way because instead of relying entirely on almond flour (which can make baked goods dense or crumbly), the cake flour provides just enough structure to create a soft, bakery-style texture. The Greek yogurt helps keep them soft, and the melty chocolate chips make it feel indulgent and yummy. I just know you’ll be making these ones over and over!

- Ripe bananas: Use very ripe bananas with plenty of brown spots for the best flavor and natural sweetness. The riper the bananas, the sweeter and more flavorful your muffins will be!
- Almond flour: The star of this recipe! I recommend using a finely ground almond flour, like Bob’s Red Mill, for the best texture and results.
- Cake flour: Don’t skip this ingredient! While almond flour makes up most of the flour in these muffins, a small amount of cake flour helps give them structure and creates a light, tender crumb. It keeps the muffins from being too dense while still letting the almond flour shine.
- Eggs: Eggs help provide structure and stability to the batter while also adding moisture and richness, helping create soft, tender muffins.
- Milk: I use regular cow’s milk, but you can easily use almond milk, coconut milk, or your favorite milk instead.
- Coconut oil: I love using coconut oil in baked goods because it adds a subtle coconut flavor and helps keep these muffins soft and tender. You can also substitute melted butter for the coconut oil if you prefer.
- Flaxseed: A simple way to add a little extra nutrition! Ground flaxseed blends seamlessly into the batter and adds fiber and healthy fats.

Let muffins cool, then enjoy!!😋
Expert Tips
- Cake flour: Don’t skip it! Even though these muffins are primarily made with almond flour, a small amount of cake flour gives them structure and a light, tender crumb. It keeps them from becoming too dense or delicate while still letting the almond flour shine.
- Bananas: Use very ripe bananas with lots of brown spots for the best flavor and sweetness.
- Don’t overmix: Be careful not to overmix the batter, or the muffins can become dense.
- Room temperature ingredients: Always make sure your wet ingredients, like eggs, Greek yogurt, and milk, are at room temperature before mixing. I like to set my ingredients out about 30 minutes to an hour before baking. The reason we want room-temperature ingredients is that the cold ingredients can cause the batter to seize, leading to tougher muffins.
- Measure flour: To avoid dry and dense muffins, always spoon the almond and cake flour into a measuring cup and level it off. Dipping your measuring cup straight into the bag or container of flour can pack too much flour than the recipe calls for. You can also use a food scale if you have one for the exact measurement.
Want Bakery-Style Muffins?
Bake at a higher temperature first for a better rise! For my muffins, I like to start the bake time at a higher temperature to help puff up the top, creating that iconic dome look. Then, I reduce the temperature to allow the muffins to fully bake through without overbaking.
Variations / Substitutions
- Cake flour: If you don’t have cake flour, you can use all-purpose flour in its place.
- Gluten-free: Use a gluten-free flour like Bob’s Red Mill 1:1 Gluten-Free Flour in place of the cake flour.
- Vegan: To make these muffins vegan, use your favorite unsweetened non-dairy milk and an egg replacer. A flax egg or chia egg should work, although I haven’t personally tested this recipe with an egg replacer, so the muffins may not rise quite as much. Be sure to use dairy-free chocolate chips, too!
- Sweetener: These muffins get their natural sweetness from very ripe bananas, but you can swap the bananas for about 1/3 cup of honey, maple syrup, or your favorite liquid sweetener. Keep in mind that using a different sweetener may slightly change the texture and flavor of the muffins.

Storage / Freezing
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
- These muffins freeze beautifully for up to 3 months. Thaw at room temperature or warm in the microwave for 20-30 seconds.

These were delicious!!! Just enough sweetness & healthy!
I am so glad, thank you! 🙂
Please ignore my precious comment. I read that I can sub the cake Flour with more gf flour. Will try this and post my Pic and review once tasted by my daughter.
Can’t wait to see the photo and hear what you think!! xo, Tawnie
Just wondering about a gluten free cake Flour in this recipe. Not sure if I read correctly. Would love to make these for my gf daughter and my 89yr mom. Need to sub refined sugar..what else can I use..a few dates (ground)? Any ideas? Appreciate any help. Thank you
I tried your recipe and the muffins turned out perfectly yummy. I used chia seeds since I didn’t have flaxseed. I’ve always been a fan of almond flour, so this is perfect. Thank you for sharing this recipe.
I love that you used chia seeds, great idea! Thank you so much Kate. Glad you enjoyed them! xo, Tawnie
I made these gluten-free by substituting Carol’s GF flour for the cake flour and 1 cup of applesauce for the bananas. Oh, so moist and tasty. I’ll definitely make these again.
I love those substitutions, thank you for sharing! So glad you enjoyed. xo, Tawnie
I’d love to make this recipe, but am looking for a substitute for the bananas. Do you think dates would work? I find that I don’t care for the flavor of “baked bananas”, other than in banana bread — I know strange.
Hi JoAnn – I am not sure if dates would work since I have never tested the recipe out that way. If you try with dates, let me know how it goes! xo, Tawnie
Whipped up a batch of these this afternoon and they did not disappoint! Exactly what I needed to cure my sweet tooth; they were delicious!
Nothing better than bananas and chocolate together. I love the almond flour flavor in these too. Easy and delicious.
These muffins look just perfect. I’ve never used almond flour before but will try and source some to use.
The texture is divine, I hope you love it! Thanks Beth! xo, Tawnie
These are perfect for my chocolate cravings! I love that muffins made with almond flour.
Yay! Thank you so much Alina!
