While on vacation with my family recently, my daughter begged me to buy her these fruity pebble rice krispie treats she found at the store. I had a hard time saying no to her (what else is new, ha!), so there she was moments later, happily enjoying a fruity pebble rice krispie treat.

I knew I had to add this recipe to my must-make list, and I am so happy I did because they’re so nostalgic and delicious!

They’re fun, vibrant, and a perfect spin on the classic beloved rice krispie treat. They combine the fruity, rainbow-colored goodness from the Fruity Pebble Cereal and the classic Rice Krispie Cereal, bound together by gooey, melted mini marshmallows.

Top them with a drizzle of melted white chocolate, and you’ve just made a visually stunning, gooey, tasty, crunchy treat!

  • Butter: if you use salted butter, omit the additional salt added.
  • Mini marshmallows: I like to use mini marshmallows because they melt quicker and more evenly. We’re also folding in some of the mini marshmallows after the cereal is added, so the little mini pockets of marshmallows create the perfect bite.
  • Vanilla and Salt: to help add more flavor.
  • Rice Krispies: Of course! You’ll need 4 cups.
  • Fruity Pebbles: you’ll need 2 cups plus a little extra if you want to crush some on top for garnish.
  • White chocolate: kinda optional but kinda not. ๐Ÿ˜‰ It’s the perfect drizzle for a finishing touch!

Expert Tips & Variations

  • Prep the ingredients before you begin: these treats come together fast once you start. It’s best to get all ingredients measured and ready to go before you start.
  • Line the baking pan with parchment or wax paper so you can easily lift the rice krispies out of the pan.
  • Work quickly: the marshmallow mixture will begin to harden as it cools, so once everything is mixed work quickly to get it transferred into the pan.
  • Gently press the rice krispy mixture instead of compacting it in tightly. You can smooth the tops with a leftover butter wrapper or spray a rubber spatula with baking spray and gently press down into an even layer.
  • Cool for enough time: Allow the treats to cool and set completely at room temperature. This usually takes about an hour.
  • You can chill them in the fridge for about 30 minutes to make them easier to cut, but not for too long, as this can make them hard.

Storage

  • At room temperature: They can last for up to 2-3 days and still maintain their freshness and texture.
  • In the refrigerator: They can last for about 1 week, although they may become slightly firmer.
  • In the freezer: Rice Krispies treats can be frozen for up to 6 weeks. Wrap them tightly in plastic wrap or aluminum foil before placing them in an airtight container or freezer bag. Thaw them in the refrigerator overnight before serving.

Fruity Pebble Rice Krispie Treats

These Fruity Pebble Rice Krispies are nostalgic, so fun, colorful, soft, chewy, and gooey for several days! Each bite of these rice krispies takes you on a journey to nostalgia. They're perfect for birthday parties and are pure bliss that transports you back to simpler times!

Ingredients

  • 1/2 cup unsalted butter, save butter wrapper
  • 8 cups mini marshmallows, divided
  • 1 tsp. vanilla extract
  • pinch kosher salt
  • 4 cups Rice Krispie Cereal
  • 2 cups Fruity Pebble Cereal
  • 1/2 cup Ghirardelli white chocolate melting wafers or white chocolate chips + ½ tsp canola oil

Instructions 

  • Line a 9×9-inch baking pan with parchment paper. Set aside.
  • Melt the butter over medium heat in a large light-bottomed Dutch oven or large pot.
    1/2 cup unsalted butter, save butter wrapper
  • Add in 6 cups of the mini marshmallows (save the other 2 cups for later!) and stir until melted.
    8 cups mini marshmallows, divided
  • Remove from heat and turn off the burner. Add in the vanilla and salt, stir.
    1 tsp. vanilla extract, pinch kosher salt
  • Add in both cereals, stir until combined.
    4 cups Rice Krispie Cereal, 2 cups Fruity Pebble Cereal
  • Stir in the remaining 2 cups marshmallows and stir just until mixed, leaving pockets of marshmallow in the mixture.
  • Transfer to the prepared pan. Gently press down using the reserved butter wrapper or spray with baking spray and gently press down in the pan into a smooth, even layer. 
  • Allow to cool for 30-60 minutes prior to cutting. Cover if letting them sit out on the counter for more than 1 hour. Lift the bars out of the pan and cut into 16 bars.
  • Melt the white chocolate and oil in the microwave until melted, about 1 min.
    1/2 cup Ghirardelli white chocolate melting wafers or white chocolate chips + ½ tsp canola oil 
  • Drizzle over bars. Allow to set up. Garnish with crushed fruity pebbles for a finishing look & enjoy!

These look great, just like all your other creations. Is it possible to just do 6 cups of Fruity Pebbles and omit the Rice Krispies? Or are the Fruit Pebbles not dense enough to hold up on their own? Thanks.
