These Homemade Chicken Breakfast Sausage Patties are my homemade version of classic store-bought breakfast sausage. Made with ground chicken and a savory blend of spices, they’re juicy, flavorful, protein-packed, and incredibly easy to make. With just a few pantry staples and a couple of minutes of prep, you’ll have a better-for-you breakfast sausage that tastes even better than store-bought and makes reaching your protein goals a breeze!

I’ve been making these chicken breakfast sausage patties for breakfast meal prep, and it’s been making getting protein in first thing in the morning sooo easy! Previously, I was buying the frozen Amylu patties from Costco, and I don’t know if I just got tired of them, but they just weren’t tasting great to me anymore. I figured I could make them healthier and taste better at home, and let me tell you…I found the perfect blend of seasonings, and the olive oil keeps the patties moist and flavorful! Stovetop is my preferred method, but if I am busy, oven or air fry are great options, too! Let me know in the comments what you think of these ones! 🙂

- Ground chicken: I like using ground chicken for a lighter breakfast sausage that’s still juicy and flavorful, but ground pork can also be used for a more traditional sausage flavor.
- Maple syrup: Adds a subtle touch of sweetness that balances the savory seasonings and gives these patties that classic breakfast sausage taste.
- Olive oil: A little olive oil mixed into the sausage mixture helps keep the patties moist, tender, and never dry.
- Seasonings: A simple blend of poultry seasoning, kosher salt, black pepper, onion powder, garlic powder, dried sage, and a few pinches of red pepper flakes gives these patties their savory, homemade breakfast sausage flavor with just a little warmth.
- Avocado oil: If cooking the patties on the stovetop, use avocado oil or another high-heat oil like grapeseed oil to prevent sticking and help them develop a delicious golden brown crust.

Mix the sausage
Combine all the ingredients and mix to combine.
Form patties
Divide mixture into ~6-8 small patties.
Cook
Heat a skillet over medium heat and cook for ~4-5 minutes on each side. Then place cooked patties on a paper towel-lined plate or baking sheet.
Serve & enjoy!!
Serve them with your favorite breakfast sandwiches, eggs, toast, breakfast burritos or tacos and ENJOY!!

- Don’t overmix: Be careful not to overmix the meat mixture, or the patties can become dense. Mix just until the seasonings are combined.
- Damp hands: Wet your hands lightly with water or oil before shaping the patties to keep the mixture from sticking.
- Thicker patties: Ground chicken is leaner than pork sausage, so keeping the patties slightly thicker helps them stay juicy.
- Check temperature: Use a meat thermometer for best results. Chicken sausage patties should reach 165°F internally.
- Batch and freeze: Double the batch and freeze extras for an easy high-protein breakfast during busy mornings. (I love doing this!)

- Sweeter maple flavor: Increase the maple syrup slightly if you like a sweeter breakfast sausage.
- Herby: Add fresh chopped sage or thyme for extra flavor.
- Traditional pork sausage: Swap the ground chicken for ground pork for a richer, classic breakfast sausage flavor.
- Air fryer option: Cook the patties in the air fryer at 375°F for about 9-11 minutes, flipping halfway through.
- Oven option: Preheat to 400°F. Line a baking sheet with parchment. Bake for 15-18 minutes, flipping halfway, until internal temp reaches 165°F.
