Mini Brie Bites

My Mini Brie Bites are an incredibly easy appetizer to make, can be prepared ahead of time and always disappear so fast!
I have been on a brie kick lately and can’t stop making this Holiday Baked Brie. I thought it would be fun to make something more poppable and snack-able, which is why I created these cute little bites!
They are really convenient for a crowd and are the perfect blend of sweet and savory. I just can’t get enough of the crispy prosciutto-thyme topping, creamy brie, and sweet fig jam—an incredible marriage of flavors!

What is Phyllo?
The name Phyllo (or Filo) comes from the Greek word for “leaf”. Phyllo is very common throughout Greece and the Middle East. (Have you ever had baklava or spanakopita? Those are made with Phyllo sheets!).
Phyllo dough is an unleavened dough (made with flour, water, and oil). The dough is then carefully rolled very thin, and then pieces are stacked & layered with oil or butter to make Phyllo sheets. It’s a labor of love to make Phyllo sheets, so it’s very common to use pre-made sheets… or in this recipe, pre-made shells!

- Prosciutto: Mmmm, gotta love the salty, savory goodness that is prosciutto! We’ll be baking it to crisp it up a bit before sprinkling on the bites. You’ll find prosciutto in the deli section of the grocery store.
- Athens Phyllo Shells: These little shells make the base of our Mini Brie Bites. You’ll want 2 packages of the shells (1.9 oz. per package) and can find them in the freezer aisle at the grocery store.
- Triple Creme Brie Cheese Wheel: Opt for a triple creme brie if you can because it is SO delicious. Place the brie in the freezer for 15-20 minutes to firm up making it easier to cut into the small cubes.
- Fig Jam: This brings the sweet taste to these Mini Brie Bites. Use whatever brand you prefer!
- Fresh Thyme: I personally think it’s worth it to use fresh thyme for these bites. But in a pinch, you could use dried!
Step by Step Directions

Crisp the prosciutto
Place the prosciutto in little nests and bake until prosciutto is crispy. Chop it into pieces and mix with the fresh thyme and then set to aside.
Prepare the phyllo and brie
Set the phyllo shells on a parchment-lined baking sheet. Slice the brie cheese into cubes. Pro tip: The brie is so much easier to cut if you first place it in the freezer for 15-20 mins to firm up.
Fill up the Phyllo cups!
Scoop about 1 tsp. of the fig jam into each pastry shell. Then, put a cube of the brie cheese on top of each.
Bake, top off, enjoyyy!!
Bake the cups for 6-8 minutes (or until cheese is melty) then top off each with a bit of the prosciutto and thyme. It’s now time to devour these adorably delicious Mini Brie Bites!
Tips to Make the BEST Mini Brie Bites
- If possible use fresh thyme as it has more flavor and aroma to it than dried thyme does. (Of course, dried thyme will still work if you need though!)
- Freeze the brie for 15-20 minutes to firm up before cutting. The firmness makes it much easier to cut into those small bites!
- Make in advance: fill each phyllo cup and refrigerate until you need to bake them. Make the prosciutto and thyme topping and also store in the fridge in an air-tight container.
- Variations: use a pepper jelly in place of the fig jam. Try them with bacon, rosemary, apple, and maple syrup, add walnuts, almonds, or pistachios for crunch, or add caramelized onions.
Storage
- If you happen to have any leftovers, store them in an airtight container in the fridge for 3-5 days. To reheat, pop them in the microwave or bake in the oven at a low temperature until warm.

Mini Brie Bites
Ingredients
- 3 oz. prosciutto
- 2, 1.9 oz. packages of Athens Phyllo Shells
- 8 oz. triple creme brie cheese wheel, place in freezer for 15-20 minutes to firm up
- 8.5 oz. jar fig jam
- 1 tbsp. fresh thyme

Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper and place the prosciutto in little nests on the baking sheet. Bake for 10-12 minutes or until prosciutto is crispy.3 oz. prosciutto
- Remove from oven, cool and chop into pieces. Toss the fresh thyme in the prosciutto and set aside.1 tbsp. fresh thyme
- Reduce the oven to 325°F.
- Slice the brie cheese into cubes. Placing it in the freezer makes it much easier to cut.8 oz. triple creme brie cheese wheel, place in freezer for 15-20 minutes to firm up
- Line another baking sheet with parchment paper and set the phyllo shells on the baking sheet.2, 1.9 oz. packages of Athens Phyllo Shells
- Place ~1 tsp. Of fig jam into each pastry shell.8.5 oz. jar fig jam
- Place a cube of the brie cheese on top.
- Bake for 6-8 minutes or until cheese is melty.
- Garnish the top of each brie bite with the prosciutto and thyme. Enjoy!
