This Healthy Egg Scramble is always my “I’m feeling like eggs today” go-to breakfast.

I like it because I know I am getting in at least 20g of protein first thing in the morning and it keeps me satisfied longer than maybe just a bowl of cereal.

Plus, regular ol’ scrambled eggs can be such a bore.

Quinoa is a healthy and simple scrambled egg stir-in that turns your breakfast into a satisfying, high-protein meal.

Add in fresh herbs (I love basil), any chopped veggies you’d like and some cheese for the perfect hint of saltiness.

Very basic ingredients are needed for this scramble:

  • Quinoa: I cook 1 cup of quinoa according to package directions. This way, I can have enough quinoa for the week to make more scrambles.
  • Eggs: I add 2 eggs to my scrambles but it’s up to you and how hungry you are. I usually make 4 eggs for my hubby!
  • Spinach: Chopped, fresh spinach is best. However, you can add really any vegetable you prefer: kale, bell peppers, mushrooms, onions, asparagus, etc.
  • Cheese: Mozzarella, white cheddar and Parmesan are all delicious options.
  • Garlic: I love garlic so I add about 2-3 cloves per serving! You can omit if you don’t prefer it in your eggs.
  • Basic seasonings: salt & pepper! You can add in basil, dill, chives or thyme too!

How to make a high protein healthy egg scramble

It’s so easy!

  1. Over medium heat, heat Extra Virgin Olive Oil and garlic in small frying pan.
  2. Whisk eggs in a small bowl and pour into the pan.
  3. Once eggs start to cook, add in the spinach, cheese, cooked quinoa and mix together. Season with salt and pepper. Garish with more cheese and any fresh herbs you may have on hand! (basil or microgreens are yummy options.)

High Protein Healthy Egg Scramble with Quinoa

Ingredients

  • 2 large eggs, slightly beaten
  • 2 Tbsp. shredded mozzarella (or Parmesan)
  • 1 cup fresh spinach, roughly chopped
  • 1 Tbsp. Extra Virgin Olive Oil
  • 2 cloves garlic, chopped
  • 1/4 cup cooked quinoa
  • pinch salt and pepper
  • 2 Tbsp. microgreens or fresh basil (optional)

Instructions

I absolutely love it! I was looking for a healthy breakfast option to use some leftover quinoa and this is perfect! I will be eating it often! I didn’t have spinach so used some kale instead and it is still delicious

I went with provolone, more of a blend than a melt, garlic cheat a shake, bell, onion, spinach and had made the quinoa with a shake of cayenne. One board, one knife, one pan and a tool to mix. Whoa, nice and straight forward way easy, and clean up, barely noticed it. We all seen The Big Bang. ROCK SHOW!
The only measuring was what came out of the shells. Oh did I mention, good stuff!
