Dinner Decided: Week 8 Meal Plan

In the Dinner Decided Week 8 menu, you’ll notice intentional overlap throughout the week. You’ll see rice is used for multiple meals, ground beef makes an appearance twice, and ingredients like bell peppers are carried into more than one dinner. It means a more streamlined grocery list, less food waste, and fewer half-used ingredients hanging out in your fridge at the end of the week.
At the same time, I never want ingredient overlap to mean eating the same thing night after night. This week has such a fun mix, from my cozy Chicken Parmesan Meatloaf and Slow Cooker Stuffed Bell Pepper Soup to Black Pepper Beef Bowls and Garlic Bread Pizza. The flavors and formats are completely different, even when some of the ingredients are the same. The only “outlier” recipe might be my cranberry apricot chicken recipe, but it’s such a great one-pan meal for Fall that you’ll absolutely love!
My hope is to take some of the mental load out of figuring out what’s for dinner, help you shop a little smarter, and give you five dinners your family can actually look forward to eating (and a sweet treat!).

Monday

- Serving Suggestion: Serve over fluffy rice for an easy weeknight meal! I love this one for lunch the next day, too!
Tuesday

- Serving Suggestion: Serve it with a simple side salad, garlic bread and pasta for a cozy dinner the whole family will love.
Wednesday

- Serving Suggestion: Let the slow cooker do the work! Serve with crusty bread for an easy, comforting dinner. SO much easier than stuffed bell peppers!
Thursday

- Serving Suggestion: It’s all made in one pan and feels a little special while still being easy enough for a weeknight!
Friday

- Serving Suggestion: Garlic bread + pizza = the ultimate Friday night dinner! Cheesy, crispy, ridiculously easy to make, and perfect served with a Caesar salad.
- Serving Size Note: Depending on how many people you need to serve, you might want to grab more than 1 loaf of bread. This will depend how many kids vs. teenagers vs. adults. But I just want to flag that recipe and shopping list is written for only 1 loaf, so use your judgement if you think you’ll need more!
Sweet Treet

- Serving Suggestion: Made right in the blender – so easy! They’re perfect for breakfast, an after-school snack, or a little something sweet!
