These bars are soft (never ever dry!), chewy, easy to make, studded with rainbow sprinkles and they have an amazing cake batter flavor!

It’s like childhood in bar form and you’re going to be obsessed.

If you’re new around here, you need to know right away I’m kind of obsessed with baking cookies.

It all started out with these Giant Chocolate Chip Cookies in 2020 during quarantine and the rest is history!

The Best Ever Funfetti Cookie recipe is what inspired me to make these Funfetti Cookie Bars. ?

I’ve added in Golden Oreos and white chocolate chips, because why not, and they turned out incredible. I mean, next level incredible like you won’t want to share with any one else! You’ll see, trust me!

Ingredient Notes

  • Cake Batter Extract: gives these cookies phenomenal flavor.
  • Rainbow SPRINKLES! Use your favorites. I usually use the Betty Crocker ones.
  • No funfetti cake mix required. These bad boys are the real deal.
  • Other common baking ingredients required such as flour, sugar, baking powder, butter, etc.

Step by Step Directions

  1. Preheat oven to 325°F.
  2. Whisk together the dry ingredients in a large bowl: All-Purpose flour, cake flour, corn starch, baking soda, baking powder and salt. Set aside.
  3. Using a stand mixer fitted with the paddle attachment, cream the butter & sugar.
  4. Then add in the eggs, egg yolks, and cake batter extract.
  5. Gradually add in the dry ingredients and then the Oreos, white chocolate chips and sprinkles. Mix until combined.
  6. Press the dough into a prepared 9×13 inch pan. Top with more Oreos. Bake for ~20 minutes.
  7. Let the bars cool completely before cutting into squares, and enjoy!

Tips and Variations

  • Measure the flour properly: Spoon the flour into your measuring cup and be sure it’s leveled. Do not scoop the flour out of the container/bag with your measuring cup because you could end up with 50% more than you need. Spoon and level by using a spoon to scoop the flour into the measuring cup and use the back of a knife to level off the top of it.
  • Add more mix-ins to the cookie bars, such as Circus animal cookies!
  • Be careful not to over bake. We don’t like dry baked goods!
  • Freezing instructions: cool bars completely, cut into squares, and freeze for up to 3 months in a freezer safe container. You can add a layer of parchment paper in-between bars if preferred.
  • Sprinkles: I recommend using regular sprinkles (aka “jimmies”) in the cookie bars, not nonpareils (the little balls). Those will bleed their color and turn the sugar cookie dough green/purple/brown.

FAQ

What if I don’t have cake batter extract?

That’s OK. You can use vanilla extract or even a combination of 1/2 tsp. vanilla and 1/2 tsp. almond extract. I recommend using the cake batter extract for this funfetti cookie bar recipe if you can get your hands on some. It adds the addicting, sweet taste and aroma of cake batter that the enthusiastic home baker in me loves so much.

How can I tell when my bars are done?

Use a wooden pick inserted at the center of the pan. You want it to come out with a few moist crumbs clinging to it. It’s better to take them out before you think you should, because they will continue to cook as they cool in the pan.

Can I make them gluten free?

To make them gluten free: Replace both the All-Purpose flour and Cake flour with: Bob’s Red Mill Gluten Free 1-to-1 Baking Flour .

Funfetti Cookie Bars

You will love how soft & addicting these Funfetti Cookie Bars are! They are full of funfetti flavor, white chocolate chips and Golden Oreos! Easy to make, fun for birthday parties but easily enjoyed year-round for any occasion.

Ingredients

  • 2 1/2 cups All Purpose Flour
  • 1 1/2 cups Cake Flour
  • 2 tsp. cornstarch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter (16 Tbsp.) cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks (no whites, just the yolks)
  • 1 tsp. cake batter extract
  • 25 Golden Oreos, divided
  • 1 cup white chocolate chips
  • 1/2 cup rainbow sprinkles

Instructions 

  • Preheat the oven to 325°F.
  • Whisk the All-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt together in a large bowl. Set aside.
    2 1/2 cups All Purpose Flour, 1 1/2 cups Cake Flour, 2 tsp. cornstarch, 1 tsp. baking soda, 1 tsp. baking powder, 1 tsp. salt
  • Place the butter and sugar into the bowl of a stand mixer and secure the paddle attachement. Turn the mixer on medium and cream the butter for 2-3 minutes until light and fluffy.
    1 cup cold, unsalted butter (16 Tbsp.) cubed, 1 1/4 cup granulated sugar
  • Add in the eggs, egg yolks and cake batter extract and blend until mixed. If any of the butter gets stuck on the paddle attachment or sides of the bowl, use a rubber spatula to knock it off.
    2 large eggs, 2 large egg yolks (no whites, just the yolks), 1 tsp. cake batter extract
  • Turn the mixture down to a slow setting and gradually add in the flour mixture. I add in about 1/4 cup at a time.
  • Add in 15 of the Oreos, white chocolate chips and sprinkles and mix just until combined. Turn the machine off.
    25 Golden Oreos, divided, 1 cup white chocolate chips, 1/2 cup rainbow sprinkles
  • Spray a 9×13 inch baking dish with non-stick baking spray. Press dough evenly into the pan using clean hands or the back of a measuring cup.
  • Break up the remaining 10 Oreos and press onto the top of the dough.
  • Bake for 18-20 minutes, or until a toothpick inserted in the middle comes out with a few moist crumbs on it. Cookie bars will continue to cook in pan once you remove from the oven, so I recommend pulling them out before the edges begin to brown too much.
  • Cool bars completely before cutting into squares and enjoy!

I am excited to try these! I noticed that the recipe specifies cold butter in several places. Is this correct? I would think I would want room temperature butter for easy incorporation. Thank you!

This is one of my all time favorite recipes. I have made it countless times. They freeze so well too! Yesterday I did a Halloween version with halloween colored peanut butter m&ms and regular chocolate Oreos and they turned out amazing. Thank you!!

I made these for a friend with a new baby and they are DELICIOUS! I ordered cake batter extract on amazon prime same day delivery. I added extra sprinkles and white chocolate chips and they turned out wonderful. I will definitely make them again. I bet they freeze well too!
