Table Talk with Tawnie
I know how much you all loved my viral Monster Energy Bite recipe, so I knew I had to make a fun energy bite for one of the Fall Dinner, Decided meal plans! Look, I know nothing can compare to the real deal Apple Pie, but if you’re looking for a healthier sweet treat in the morning or early afternoon that has warming flavors like apple pie, this recipe hits the spot!

- Dried apple rings: I use Bare dried apple rings for their chewy texture and concentrated apple flavor. They give these energy bites that classic apple pie flavor without needing fresh apples.
- Medjool dates: Soft, naturally sweet Medjool dates help bind the energy bites together while adding sweetness and a chewy texture. If your dates feel dried out or firm, soak them in warm water for 5–10 minutes, then drain and pat dry before using.
- Old-fashioned oats: Rolled oats add a hearty texture to these energy bites. Quick oats will give these energy bites a lighter, softer texture. I just don’t recommend using steel-cut oats.
- Pecans: Pecans add a buttery, slightly nutty flavor that pairs so well with the apple and warm spices. They also give the bites a little extra texture. Feel free to swap for another nut or omit for a nut-free version.
- Maple syrup: Pure maple syrup adds a touch of extra sweetness and helps bring the mixture together if it’s a little too dry. If your dates are especially soft and sticky, you may not need much (or any), but I usually add a little!

Expert Tips
- Use soft Medjool dates: Soft, sticky dates help hold the energy bites together and give them their naturally sweet, chewy texture. If your dates feel dry or firm, soak them in warm water for 5–10 minutes, then drain and pat dry before using.
- Don’t skip the processing: The mixture should be sticky enough to hold together when pressed. If it seems too dry or crumbly, add maple syrup 1 tablespoon at a time until the consistency is right.
- Adjust the sweetness: Depending on how sweet your dried apples and dates are, you may need less or more maple syrup. Start with 2 tablespoons and add more as needed.
- Chill before rolling: If the mixture feels too sticky to work with, refrigerate it for 10-15 minutes before rolling into balls.
- Use a cookie scoop: A small cookie scoop helps make evenly sized energy bites so they’re easy to portion and store.
- Wet hands: If the mixture is sticky, lightly dampen your hands with water before rolling. I like to do this too to keep that soft, chewy texture; it helps a lot!
- Store them cold: These bites hold their shape best when stored in the refrigerator, making them perfect for meal prep.
Variations / Substitutions
- Swap the nut butter: Try peanut butter, cashew butter, or sunflower seed butter for a different flavor.
- Swap the nuts: Use walnuts, cashews, or sunflower seeds in place of the pecans.
- Add raisins: For extra chewy texture, mix in a small handful of raisins.
- Add extra spice: If you love a heavily spiced apple pie, increase the cinnamon or add a pinch of allspice or cardamom.
- Make them nut-free: Swap the almond butter for sunflower seed butter and use sunflower seeds in place of the pecans.

Storage / Freezing
- Store in an airtight container in the refrigerator for up to 1 week. They’re great straight from the fridge, but you can also let them sit at room temperature for a few minutes to soften slightly.
- For longer storage, freeze the energy bites in a freezer-safe container or zip-top bag for up to 3 months. Thaw in the refrigerator or grab one straight from the freezer for a firmer, chewier snack.

These look delicious and I’m excited to try them. I’m trying to find ways to add protein into my diet. Would I be able to add protein powder to these?
Hi – thank you Kim! 🙂 I haven’t tried but I bet it would be okay! You might need to add a splash of water or something to bind if it feels dry at all with the powder being added in!
