Ingredients

  • 1 cup unsweetened dried apple rings, I use the Bare brand
  • 12-14 soft Medjool dates, chopped if very large (if dates feel dried out, you can soak in warm water for 5-10 minutes)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup pecans
  • 1/3 cup creamy almond butter
  • 2 Tbsp. ground flaxseed
  • 1 tsp. vanilla extract
  • 1½ tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • 1/4 tsp. kosher salt
  • 2-4 Tbsp. pure maple syrup, add more as needed to help with consistency of energy bites

Instructions

  • Add ingredients: Add all ingredients to a food processor.
1 cup unsweetened dried apple rings, 12-14 soft Medjool dates, 1 cup old-fashioned rolled oats, 1/2 cup pecans, 1/3 cup creamy almond butter, 2 Tbsp. ground flaxseed, 1 tsp. vanilla extract, 1½ tsp. ground cinnamon, 1/4 tsp. ground nutmeg, 1/4 tsp. ground ginger, 1/4 tsp. kosher salt, 2-4 Tbsp. pure maple syrup

  • Blend: Process until the mixture begins to clump together and holds when pressed between your fingers.

  • If the mixture seems too dry or crumbly to roll, add maple syrup, 1 Tbsp. at a time, and process again. If your dates are especially soft and sticky, you may not need any maple syrup but I usually always add some in.
  • Scoop and roll: Scoop the mixture into ~1½ Tbsp. portions and roll firmly between your palms to form balls. If the mixture is sticky, lightly dampen your hands with water before rolling. I like to do this too to keep that soft, chewy texture; it helps a lot!

  • Chill: Refrigerate for 20-30 minutes to firm up Start Timer. Store in an airtight container in the refrigerator or in the freezer for a grab-and-go snack!

Notes

Store in an airtight container in the refrigerator for up to 1 week. They’re great straight from the fridge, but you can also let them sit at room temperature for a few minutes to soften slightly.
For longer storage, freeze the energy bites in a freezer-safe container or zip-top bag for up to 3 months.
