The bagels work so well in this recipe. Their crunchy exterior adds a satisfying texture to this casserole and when baked, the bagel cubes soak up the egg mixture while maintaining their chewy texture, creating a delicious contrast in each bite. Ugh, it’s just the best!

  • Eggs: The base of the casserole, providing fluffiness and structure. I recommend using large eggs.
  • Cheese: Feel free to use a combination of your favorite cheeses: Cheddar, Mozzarella, Swiss, Gruyère, or pepper jack for more complexity.
  • Cream cheese: Cut the cream cheese into small cubes so that you get pockets of creamy goodness throughout the casserole. You can use flavored cream cheese (like chive or veggie) for extra flavor.
  • Everything But The Bagel Seasoning: If you want to enhance the everything bagel flavor, sprinkle a bit of extra everything bagel seasoning on top before baking and after baking/before serving.
  • Cherry Tomatoes: I like to roast the tomatoes first, I love the color they add to the casserole.
  • Other ingredients needed: olive oil, salt, pepper, Dijon mustard, cayenne, and green onions.

Expert Tips

  • Use day-old or slightly stale everything bagels if possible, as they absorb the egg mixture better without getting too soggy. If you only have fresh bagels, you can toast them briefly before adding them to the casserole.
  • Grate the cheese fresh from a block yourself, it will melt better and make for a better tasting casserole, too.
  • Make-Ahead Friendly: This casserole can be prepared the night before and baked in the morning, making it perfect for a stress-free breakfast or brunch.

Variations

  • Different veggies: Diced onions, bell peppers, or spinach are great additions for extra flavor and nutrition. Sauté them briefly to soften before adding them to the casserole, so they blend well with the egg mixture.
  • Add meat: feel free to add sausage, bacon, or ham; just make sure to cook and drain the meat beforehand to avoid excess grease in the casserole. These proteins add extra flavor and make the dish even more yummy.

Everything Bagel Breakfast Casserole

My Everything Bagel Breakfast Casserole is loaded with eggs, cheese, cherry tomatoes, everything bagels, and cream cheese. It's a savory, flavorful, and make-ahead dish perfect for brunch, entertaining, or meal prep.

Ingredients

For the tomatoes

  • 24 oz. cherry tomatoes
  • 1-2 Tbsp. olive oil
  • 1 tsp. kosher salt
  • 1/8 tsp. black pepper

Bagels

  • 5 everything bagels*, cut into bite sized pieces

For the casserole

  • 8 large eggs
  • 2 cups whole milk or half and half
  • 1 – 1 1/2 cups gruyere, mozzarella, cheddar, jack, etc. grated (use as much cheese as you'd like depeding on your cheesy preferences )
  • 1 Tbsp. Dijon mustard
  • pinch cayenne
  • pinch salt and pepper
  • everything but the bagel seasoning
  • 8 oz. full-fat cream cheese, cold, cut into cubes
  • for finishing: green onions

Instructions 

  • Preheat the oven to 400°F. Toss the cherry tomatoes on a baking sheet lined with foil with the olive oil salt and pepper and cook for ~25-30 minutes.
    24 oz. cherry tomatoes, 1-2 Tbsp. olive oil, 1 tsp. kosher salt, 1/8 tsp. black pepper
  • *Bagels: You can use dry, day old bagels or toast the bagel pieces like this: Place bagels on a baking sheet and toast for 8-10 minutes at 400°F or until toasty. I typically put the tomatoes and bagels in at same time. Keep an eye on the bagels so they don’t get too toasty. Remove from oven and allow to cool a bit.
    5 everything bagels*, cut into bite sized pieces
  • Meanwhile, whisk together the eggs, cheese, milk, heavy cream, dijon, salt and pepper in a large bowl.
    8 large eggs, 2 cups whole milk or half and half, 1 – 1 1/2 cups gruyere, mozzarella, cheddar, jack, etc. grated, 1 Tbsp. Dijon mustard, pinch cayenne, pinch salt and pepper
  • Toss with the toasted bagels, sit 20 minutes, and stir occasionally. 
  • Add the roasted cherry tomatoes to the bagel mixture and stir to combine.
  • Grease an oven-safe casserole dish or 9×13-inch pan and turn out the bagel mixture into the pan. Dot with cream cheese over the top and a sprinkle of everything but the bagel seasoning. Loosely cover with foil and bake at 375°F for 40-45 minutes foil on and 10 minutes foil off or until the center is set.

  • Allow to cool for a few minutes. Garnish with more green onions and everything but the bagel seasoning and serve. YUM!
