CHEWY, CHOCOLATE-Y, NO-BAKE, NUTRITIOUS DATE FILLED BROWNIES!
You guys, I thought I was going to go the entire month of July without publishing 1 single blog post. *wahhhhh!* But I made the cut just in time. July 31st, the day these no bake brownies were born!
I’ve really been struggling with spending time blogging and I’ve been beating myself up about it. Maybe the entire month off of posting an actual blog post was just what I needed. To feel refreshed and get ideas flowing again.
Additionally, I will be going to the Tastemaker blogging conference in Sept. this year and I am sure it will reignite the fire in me to keep up with my blogging. I am so excited to learn, network and have fun with bloggers around the US to share our passion and have fun while were at it! This girl rarely gets outta town, and when I do, it’s typically for conferences (LOL)
When I was grocery shopping a few weeks ago there was an awesome sale on dates So naturally I bought a huge tub of them. My boyfriend doesn’t eat dates so I knew it was going to be a mission to eat them all to myself. There just only so many dates filled with peanut butter a girl can eat for snack time though. That’s when I knew I had to make something else with the dates!
I love a good energy bite with dates, but I wanted to make something different.
It’s so hot here in Fresno right now so turning the oven on just doesn’t sound like a good idea. Therefore, no bake brownies were created!
They are the perfect treat – and I love that no oven is required here! Just a food processor and a few bowls!

Gluten-Free No Bake Date Brownies
Ingredients
- 25 dates, pitted
- 2 cups walnuts save ~1/2 cup for topping
- 3/4 cup unsweetened cocoa powder
- 1/4 cup powdered peanut butter
- 2 Tbsp. Coconut oil, melted
- 1 tsp. vanilla extract
- 2 tsp. water
- 1/4 tsp. sea salt
- 2 Tbsp. cacao nibs
For the frosting
- 1/4 cup powdered peanut butter
- 1/4 cup cocoa powder
- 1/4 cup agave
- 2 Tbsp. coconut oil
- 1 tsp. vanilla extract
Instructions
- Soak dates in lukewarm water in a bowl.
- While dates are soaking, place 1 1/2cups walnuts in a food processor until crumbly. Then add in the cocoa powder, peanut butter, and salt. Set mixture aside in a bowl. Then once dates have soaked for about 10 minutes, place them in food processor and blend until it makes somewhat of a paste. Add in vanilla and water, process again for a few second. Take the dates out and place in bowl.
- Then, put the cocoa powder mixture back in, and gradually add in dates on low speed. It will look crumbly but don't add in any more liquid!
- Line an 8×8 dish with parchment paper and dump mixture into dish. Press mixture down until roughly distributed. Then add cacao nibs and remaining walnuts on top. Press evenly all the way around. Place in freezer while you make the frosting.
- In a bowl, mix together all of the ingredients for the frosting. It should be a smooth consistency. Spread on top of brownies and then place in fridge for 1 1/2 -2 hours. Then enjoy! These keep well in the freezer too.
