Skillet Lasagna Recipe with Rotini

This Skillet Lasagna Recipe is a fast and convenient weeknight pasta recipe that takes minimal effort but is big on flavor too!
This pasta recipe has easily become our go to weeknight comfort food meals! Everything cooks in the same skillet or pot so clean up is easy and it’s all made in 30 minutes or less.
My favorite part is there is no need to cook the rotini noodles ahead of time. You just add them right into the skillet and they cook in the sauce! The noodles absorb all the flavor and get perfectly cooked.

Ingredient details

- Mushrooms: I like use white button mushrooms or baby bella
- Bell Pepper: red preferred
- Ground Turkey (or ground Italian sausage or ground beef)
- Your favorite jarred red pasta sauce/tomato sauce
- Chicken broth (or water can be used)
- Rotini pasta, dry (no need to boil it before you add it in, yay!)
- Freshly shredded mozzarella cheese
- Freshly grated Parmesan cheese
How to make it

- Heat olive oil in a large skillet over medium high heat.
- Add in diced onion, mushrooms, bell pepper, ground turkey, garlic and seasonings. Cook until ground turkey is no longer pink. Drain any excess liquid/grease from pan and return to heat.
- Stir in pasta sauce, chicken broth and pasta. Bring to a boil. Cover, reduce heat to a simmer and cook for 10-15 minutes or until noodles are tender/pasta is cooked.
- Stir in mozzarella and parmesan cheese. Taste and season with salt and pepper to taste, if needed.
- In a small bowl, stir chopped parsley and basil into ricotta.
- Serve pasta with a dollop of ricotta mixture on top and enjoy immediately.
Tips and FAQ:
- Pasta: Feel free to use another pasta shape you have on hand such as bow-tie pasta (farfalle), penne, ziti, or rigatoni.
- Veggies: This recipe has mushrooms and bell peppers, you can easily leave out if you prefer. Or even add in additional veggies like spinach or zucchini.
- Meat: Ground turkey, ground pork, ground chicken, ground Italian sausage or ground beef are all great options in this recipe.
- I like to cook this pasta in a large skillet. You can use a cast iron skillet or a large pot too!

- 1/2 cup chicken broth (or water)
- 2 cups rotini, dry
- 1 1/2 cups mozzarella cheese, freshly shredded
- 1/2 cup Parmesan cheese, freshly grated
- 1 cup ricotta cheese
- 1 Tbsp. fresh parsley, minced
- 1 Tbsp. freshly basil, minced

Such a good recipe! Substituted ground lamb in place of ground turkey. My husband said it tastes just like lasagna! Cannot wait to send a goodie bag to my Grandma (who is 100) for her to try! Definitely making this again!

New favorite meal prep! Made this 3 times so far. I use protein rotini pasta. Also, at the end, I substitute the ricotta cheese in exchange for 0% fat Greek yogurt. This one pot recipe gives the ability to substitute that last ingredient making this so handy for serving to eaters with different dietary goals in mind! Keep both ricotta & Greek yogurt on hand so you have the options! I can eat this for lunches/dinners all week long.
