Ingredients
▢ 1/3 cup extra virgin olive oil (use a mild olive oil, not overly peppery or robust)
▢ 3/4 cup dark brown sugar (packed)
▢ 1/4 cup granulated sugar
▢ 2 large eggs (room temperature)
▢ 1¼ cups mashed very ripe bananas (~3 bananas, be sure to measure though)
▢ 1½ tsp. vanilla extract
▢ 1½ cups all-purpose flour
▢ 1/4 cup Dutch-process cocoa powder
▢ 1 tsp.. baking powder
▢ 1/2 tsp. baking soda
▢ 1/2 tsp. fine salt
▢ 1/2 tsp. espresso powder (optional but highly recommended)
▢ 1/2 cup mini chocolate chips (plus more to garnish on top)

This is what I call the simmer method with a lid:
🥚 large pot to boiling water

🥚 back low to a simmer and COVER with a lid to maintain a gentle simmer for 12 minutes for a perfect hard boil.

¼ cup soy sauce
2 Tbsp. mayonnaise
2 Tbsp. chili crisp/crunch (I use the Momofuku Chili Crunch)
1½ Tbsp. fresh lime juice (about 1 lime)
1-2 Tbsp. honey or granulated sugar, to taste
1 Tbsp. sesame oil
1 tsp freshly grated ginger (or ½ tsp ground ginger)
1 small garlic clove, grated or minced
3 Tbsp warm water, plus more as needed
Optional heat: sriracha or red pepper flakes

1 cup (226g) unsalted butter, room temperature
2 ½ cups (500g) granulated sugar
Zest of 3 large Bee Sweet Citrus Cara Cara Oranges
5 large eggs, room temperature
3 cups (360g) all-purpose flour, spooned & leveled
1 Tbsp. baking powder
½ tsp salt
1 cup (240g) full-fat sour cream, room temperature
¼ cup (60ml) fresh orange juice
1 tsp vanilla extract
Orange Glaze
1 ½ cups (180g) powdered sugar
3-4 Tbsp fresh orange juice
1 tsp orange zest (optional, for finishing)
Instructions
1. Prep the pan & oven: Preheat oven to 325°F. Generously grease a 10-12 cup Bundt pan with butter or baking spray, making sure to get into every crevice. Lightly flour and tap out excess.
2. Infuse the sugar with orange zest: In a small bowl, combine the granulated sugar and orange zest. Rub together with your fingers until fragrant and slightly damp. This releases the oils directly into the sugar — one of the biggest pro-level flavor upgrades.
3. Cream butter & citrus sugar: In a stand mixer (or hand mixer), beat butter and citrus sugar on medium-high for 4–5 minutes until very light and fluffy. Scrape the bowl well.
4. Add eggs (slowly!): Add eggs one at a time, beating well after each addition and scraping the bowl frequently. This prevents curdling and creates a stable, emulsified batter.
5. Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
