Ingredients
2- 2½ lbs. boneless, skinless chicken thighs
1½-2 tsp. kosher salt, or to taste
Freshly cracked black pepper, to taste
4-6 cloves garlic, minced
¾ cup full-fat Greek yogurt
1-2 Tbsp. fresh lemon juice
1-2 Tbsp. fresh parsley, chopped (or 1 tsp dried)
2 Tbsp. extra virgin olive oil
1 Tbsp. red wine vinegar
½ tsp. sumac
½ tsp. cumin
1 tsp. paprika
1 tsp. oregano
1 tsp. onion powder
Note on spices: you can use a blend of your favorite spices, this is just what I’ve found I like!
For finishing:
Lemon juice + lemon zest
Extra parsley (optional)

I’ve been adding this one to our meal plan for the week the last few months and it’s sooo good. The cottage cheese taco sauce on top is another way to sneak in protein but if that’s not your vibe a little pico and hot sauce is perfect! 👌🏼 I hope you love these!

For the potatoes
2 lb russet or Yukon gold potatoes, diced in small ½ inch even pieces (I leave the skin on, easy peasy!)
2 Tbsp. olive oil
1 tsp. garlic powder
½ tsp. paprika
Salt and pepper, to taste
For the taco beef
1 lb. ground beef
1 small white or yellow onion, finely chopped
1 Tbsp. tomato paste
1, (1 oz.) packet taco seasoning
¾ cup beef bone broth (Kettle & Fire) adding in the bone broth adds in ~8 grams extra protein
Topping Ideas:
Guacamole
Pico de gallo
Sour cream
Pickled red onions
Shredded cheese (cheddar or Mexican cheese blend)
For the cottage cheese taco dressing (optional but adds more protein!)
½ cup cottage cheese
¼ cup canned Rotel tomatoes with green chiles
3 Tbsp. sour cream or Greek yogurt
Juice of 1 lime
1 Tbsp. olive oil
1-2 tsp. honey
½ tsp. taco seasoning
Salt, to taste

⅓ cup unsalted butter, melted and slightly cooled (warm, not hot ~90-100°F)
1 cup whole milk, warmed to ~110°F
1 large egg + 1 large egg yolk, room temperature
For the cinnamon filling
½ cup unsalted butter, softened
⅔ cup light brown sugar, packed
1 Tbsp ground cinnamon
For the strawberry filling
½–⅔ cup thick strawberry preserves
½ cup fresh strawberries, very finely chopped (pat dry to remove excess moisture)
For the strawberry glaze
1 cup powdered sugar
1-2 Tbsp milk
1-2 Tbsp strawberry preserves
½ tsp vanilla extract
Pinch of salt
Sliced or diced strawberries, for garnish

▢ 1 1/2 cups uncooked orzo or pearl couscous (~260 grams)
▢ 1/2 small red onion, finely diced (about 1/2 cup)
▢ 1/2 cup kalamata olives, sliced
▢ 1, (14.5 oz. jar) marinated artichoke hearts, drained and chopped
▢ 1 cup cherry tomatoes, halved or quartered if large (or chopped sun dried tomatoes work really well here too)
▢ 1/2 cup peperoncini, sliced
▢ 1/2 large cucumber, quartered (or 2-3 mini cucumbers )
▢ 1, (15.5 oz. can) garbanzo beans/chickpeas, drained and rinsed
▢ 8 oz. feta cheese (I like to buy the chunk and break it up myself. I use the whole 8 oz. block, but if you prefer less feta, use less 🙂 )
Dressing
▢ 1/2 cup red wine vinegar
▢ 1/2 cup olive oil
▢ 2 cloves garlic, minced or pressed with a garlic press
▢ 1/4 cup fresh basil, chopped, plus more to garnish
▢ 1 tsp. dried oregano (or 1 Tbsp. fresh)
