So I experimented in the kitchen today to see if I could troubleshoot the recipe..here is how it went! ❤️

Ingredients
▢ 12 Tbsp. unsalted butter (cut into pieces (this helps it melt evenly and brown better))
▢ 1 cup dark brown sugar, packed (light brown will be ok too)
▢ 1/2 cup granulated sugar
▢ 1 large egg (room temperature)
▢ 1 large egg yolk (room temperature)
▢ 2 Tbsp. whole milk
▢ 1 Tbsp. pure vanilla extract
▢ 2 2/3 cups all purpose flour (spooned and leveled, I recommend weighing the flour (~300 grams) for best results )
▢ 1 tsp. salt
▢ 1 tsp. baking soda
▢ 1/2 tsp. baking powder
▢ 2, 4 oz. bars semi sweet chocolate, chopped, divided
▢ flaky sea salt, for finishing

▢ Mix-ins: really whatever you like! This is a great base recipe for a lot of add in options! Cookie dough, peanut butter cups, Oreos, M&Ms, chocolate chips, graham crackers, fruit, sprinkles, a protein bar, etc.

Quick pickled carrots:
▢ 1 large carrot (peeled and grated or julienned)
▢ 1 ½ tbsp white vinegar
▢ 1 ½ tsp sugar
▢ Pinch of salt
For the chicken:
▢ 2 tsp. olive oil
▢ 2 tbsp. minced shallot (about half of a large shallot finely minced)
▢ 1 fresno chili (seeded and finely diced)
▢ 2 cloves garlic (minced)
▢ 1 tsp. ginger (minced)
▢ 1 lb. ground chicken
▢ salt and pepper to taste
▢ ½ bunch green onions (diced)
▢ sesame seeds (measure with your heart)
For the sauce:
▢ 2 tbsp. Thai sweet red chili sauce
▢ 2 tbsp. light brown sugar or honey
▢ 1 tbsp. dark soy sauce
▢ 2 tsp. sesame oil
▢ 2 tsp. fish sauce or oyster sauce (optional but adds great flavor)
▢ ½ lime (juiced)
▢ pinch of chili flakes
Serving & garnish:
▢ butter lettuce leaves, top with drizzle of Thai chili sauce if desired, cashews or peanuts, fresh cilantro, lime wedges, pickled carrots
