Everyday Chicken Salad

This Everyday Chicken Salad is creamy, fresh, and packed with flavor. Made with tender chicken, celery, herbs, Greek yogurt, and mayo, it’s perfect for sandwiches, wraps, or easy lunches.

Ingredients

  • 3-4 cups cooked chicken chopped or shredded (about 1 rotisserie chicken is perfect!)
  • 1/2 cup mayonnaise
  • 2 Tbsp. Greek yogurt
  • 1 Tbsp. Dijon mustard
  • 3 ribs celery finely diced
  • 1/4 cup finely diced red onion
  • 2 tsp. fresh lemon juice
  • 1-2 tsp. pickle juice
  • 1/4 tsp. celery seed ground
  • 1/2 tsp. kosher salt plus more to taste
  • 1/4 tsp. black pepper
  • Pinch paprika
  • 2 Tbsp. Fresh parsley or fresh dill plus more for garnish
  • Optional: 1/2 cup pecans or 1/4 cup roasted sunflower seeds

Instructions

  • Prepare the chicken: Add the chopped or shredded chicken to a large mixing bowl. If using rotisserie chicken, remove skin and bones first.

  • Make the dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, pickle juice, celery seed, kosher salt, black pepper, and paprika until smooth and well combined.

  • Combine and mix: Pour the dressing over the chicken. Add the celery, red onion, and fresh parsley or dill. Stir until everything is evenly coated, being careful not to overmix so the chicken stays tender.

  • Add optional mix-ins: If using, gently fold in the chopped pecans or roasted sunflower seeds.

  • Taste & adjust: Taste and adjust seasoning as needed. Add more salt, pepper, lemon juice, or pickle juice to your preference.
  • Chill & serve: Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with extra herbs before serving.
