Instructions
Melt butter:
Melt the butter in a medium saucepan over medium heat.
1 Tbsp. unsalted butter
Add rice:
Add the rice and cook, stirring frequently, for 2-3 minutes until lightly toasted and fragrant.

1½ cups jasmine rice
Add the rest of the ingredients:
Add the coconut milk, water, sugar, salt, and lime zest. Stir to combine and bring to a boil over medium-high heat.

Simmer:
Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.

Remove from the heat and let stand, covered, for 10 minutes.

Fluff and enjoy:
Fluff the rice with a fork and stir in the fresh lime juice. Taste and adjust seasoning as desired.
