Ingredients

Ingredients to muddle:

Rest of ingredients for the drink:

  • 4 oz. 100% pineapple juice
  • 1/2 oz. blue agave or agave nectar
  • 1 lime juiced
  • Sparkling water or ginger ale (optional for fizz!)
  • Ice cubes

Instructions

  • Wet the rim of your glass with a slice of a juicy lime and gently rotate the rim into the salt to coat the edge of the glass evenly. Fill the glass with ice cubes and set aside.
  • Then, gently muddle the pineapple, limes and jalapeño with ~2 oz. pineapple juice for ~30 seconds – 1 minute to release the juices and oils.
  • Pour these juices (along with some of the jalapeño seeds if you really like it spicy) into your prepared cocktail glass.
  • Add in the remaining pineapple juice, fresh lime juice and agave nectar. Give it a gentle stir.
  • Add a splash of sparkling water (optional) Garnish as desired: lime wedge, pineapple chunk, jalapeño round.
  • *See recipe notes for adding tequila.

Notes

  • For the non-mocktail version: add in 2 oz. of tequila and 3/4 oz. triple sec!
