Prepare the pan: Use a 12-count silicone cupcake pan or line a regular cupcake pan with cupcake liners; set aside. Whisk the dry ingredients: In a large bowl, whisk together the oat flour, protein powder, salt, and cinnamon.

Mix the wet ingredients: Add the peanut butter, maple syrup, vanilla, and 2 tablespoons milk. Mix until a thick cookie dough-like mixture forms. Add milk 1 tablespoon at a time until it holds together when pressed.

Add Rice Krispies: Fold in the Rice Krispies.

Press into pan: Divide the mixture into each cavity in the cupcake tin, and firmly press into each cup. You should get 12 exactly.
Melt the chocolate: Add the chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth and melted.
1 cup dark chocolate chips, 1 tsp. coconut oil
Add chocolate layer: Pour over the peanut butter mixture and spread evenly. Sprinkle with flaky sea salt, if desired.

Chill: Refrigerate for 1-2 hours or until fully set. Start Timer
