Favorite Everyday Salad

This is my go-to everyday salad recipe. It’s simple, satisfying, and endlessly versatile. It's the perfect balance of fresh and crunchy with just the right amount of flavor to complement any meal or dish.

Ingredients

For the salad:

  • 10 oz. spring mix red butter leaf/baby butter lettuce, arugula, etc (really any combination of lettuce you like)
  • 8 oz. ciliegine cheese little mini mozz balls!
  • 2 large avocado diced
  • 1 pint cherry tomatoes halved or quartered
  • 1 red bell pepper seeded and diced small
  • ½ red onion diced small
  • ½ cup pine nuts or sunflower seeds plus more as desired
  • salt and pepper to taste

Dressing:

  • ¾ cup extra virgin olive oil choose a good quality!
  • ¼ cup champagne vinegar
  • 2 Tbsp. finley minced shallots
  • 2 Tbsp. lemon juice fresh
  • 1-2 Tbsp. honey
  • 2 tsp. dijon mustard
  • ¼ tsp. garlic powder or ½ tsp. minced garlic
  • kosher salt and freshly ground black pepper to taste

Instructions

  • Add lettuce to salad bowl: Place washed lettuce in a large salad bowl and toss with some salt and pepper.

  • Place all ingredients on top: Add all remaining salad ingredients to the lettuce.
    8 oz. ciliegine cheese, 2 large avocado, 1 pint cherry tomatoes, 1 red bell pepper, ½ red onion, ½ cup pine nuts or sunflower seeds, salt and pepper

  • Make the dressing: Add all the dressing ingredients to a small bowl. Whisk until combined. You can also add all the ingredients to a sealed jar and shake until combined. Taste and adjust - adding more salt and pepper, a little vinegar for more tang, a touch more honey for sweetness, etc.

  • Dress and toss: Dress the salad with the desired amount of dressing and toss until combined.

The dressing will stay fresh in the fridge for up to two weeks (if it lasts that long!).
