Copycat Chewy Granola Bars

My Copycat Chewy Granola Bars are made with a blend of oats and puffed rice cereal, mixed together with honey and brown sugar with mini chocolate chips on top! They require no baking, have only 7 ingredients, are great for kids’ snacks, and are yummy paired with yogurt and fruit!

Ingredients

  • 2 1/2 cups Rice Krispies
  • 1 1/2 cup quick-cooking/instant oats, such as Quaker Quick 1-Minute Oats (do not use regular old-fashioned oats)
  • 1/3 cup honey
  • 1/3 cup brown sugar, packed light or dark
  • 1/3 cup salted butter
  • 2 tsp. vanilla extract
  • 1/4 cup mini chocolate chips (or enough to cover the tops)

Instructions

  • Line a 8x8 or 9x9 inch pan with foil, making sure there is some overhang. Spray lightly with nonstick spray and set aside.
  • Mix Rice Krispies and oats together in a large mixing bowl. Set aside.
    2 1/2 cups Rice Krispies, 1 1/2 cup quick-cooking/instant oats, such as Quaker Quick 1-Minute Oats (do not use regular old-fashioned oats)
  • Melt honey, brown sugar, and butter in a saucepan on the stove. Bring it to a gentle simmer so it’s bubbling, then turn the heat down and cook for another 2 minutes, stirring occasionally, making sure it doesn’t bubble up over the pan. Remove from heat and stir in the vanilla.
    1/3 cup honey, 1/3 cup brown sugar, packed, 1/3 cup salted butter, 2 tsp. vanilla extract
  • Pour this over the oat mixture and stir thoroughly to combine.
  • Firmly press into the prepared pan. Make sure it’s tightly compacted in the pan. Top with mini chocolate chips.
    1/4 cup mini chocolate chips (or enough to cover the tops)
  • Refrigerate 1-2 hours until set up, slice into bars and enjoy!

Notes

  • Store in an airtight container at room temperature for up to 1 week or in the refrigerator for up 2 weeks.
  • Wrap in plastic wrap or parchment paper and freeze for up to 3 months.
  • Place parchment paper between layers if you need to stack the bars.
