My Copycat Chewy Granola Bars are made with a blend of oats and puffed rice cereal, mixed together with honey and brown sugar with mini chocolate chips on top! They require no baking, have only 7 ingredients, are great for kids’ snacks, and are yummy paired with yogurt and fruit!
Line a 8x8 or 9x9 inch pan with foil, making sure there is some overhang. Spray lightly with nonstick spray and set aside.
Mix Rice Krispies and oats together in a large mixing bowl. Set aside.
2 1/2 cups Rice Krispies, 1 1/2 cup quick-cooking/instant oats, such as Quaker Quick 1-Minute Oats (do not use regular old-fashioned oats)
Melt honey, brown sugar, and butter in a saucepan on the stove. Bring it to a gentle simmer so it’s bubbling, then turn the heat down and cook for another 2 minutes, stirring occasionally, making sure it doesn’t bubble up over the pan. Remove from heat and stir in the vanilla.
1/3 cup honey, 1/3 cup brown sugar, packed, 1/3 cup salted butter, 2 tsp. vanilla extract
Pour this over the oat mixture and stir thoroughly to combine.
Firmly press into the prepared pan. Make sure it’s tightly compacted in the pan. Top with mini chocolate chips.
1/4 cup mini chocolate chips (or enough to cover the tops)
Refrigerate 1-2 hours until set up, slice into bars and enjoy!

Store in an airtight container at room temperature for up to 1 week or in the refrigerator for up 2 weeks.
Wrap in plastic wrap or parchment paper and freeze for up to 3 months.
Place parchment paper between layers if you need to stack the bars.
