Egg & Asparagus Sandwich on Garlic Bread

Ingredients

  • 2 slices of French Bread
  • 2 Tbsp. mozzarella cheese
  • 2 eggs
  • 1/2 cup asparagus
  • 1 tsp. fresh garlic
  • 3 tsp. Kerrygold butter
  • 1 tsp. garlic powder
  • salt and pepper to taste
  • non-stick spray

Instructions

  • Melt 2 tsp. butter and mix in the garlic powder and fresh garlic. Spread this mixture on the inside of the two slices of bread. Toast bread either in the toaster or on a pan on the stove. Set aside.
  • Spray a pan with non-stick spray, cut the asparagus in thirds and cook asparagus until tender.
  • While the asparagus cooks, heat 1 tsp. butter in a pan and scramble the eggs. Once the eggs are about half way cooked toss in the cheese, salt and pepper. Mix the cooked asparagus in with the eggs and place inside your garlic bread to make a sandwich!
