This skillet lasagna recipe with rotini is an easy family dinner that only takes 30-ish minutes and ONE POT to make! It's comforting and much easier than making a traditional lasagna!
Heat olive oil in a large skillet over medium high heat.
1 Tbsp. olive oil
Add in diced onion, mushrooms, bell pepper, ground turkey, garlic and seasonings.
1/2 white onion, diced, 1 cup white mushrooms, chopped (about 5-6 mushrooms), 1 red bell pepper, diced, 1 lb. ground turkey, 2 cloves garlic, minced, 1 tsp. Italian seasoning
Cook, stirring occasionally, until ground turkey is no longer pink, about 5-7 minutes. Drain any excess liquid/grease from pan and return to heat.
Add in pasta sauce, chicken broth and rotini pasta. Stir. Bring to a boil. Cover, reduce heat to a simmer and cook for 10-15 minutes or until pasta is cooked.
24 oz. red pasta sauce, 1/2 cup chicken broth (or water), 2 cups rotini, dry
Stir in mozzarella and parmesan cheese. Taste and season with more salt and pepper, if needed. Turn off heat.
1 tsp. salt, 1 1/2 cups mozzarella cheese, freshly shredded, 1/2 cup Parmesan cheese, freshly grated, 1/2 tsp. black pepper
In a small bowl, stir chopped parsley and basil into ricotta.
