Ritz Cracker Christmas Cookies

They are quick and easy to make using minimal ingredients, no baking time required, and quick assembly, making them ideal for a last minute treat or for the busy holiday season. The crispness of the Ritz crackers offers a satisfying crunch, which is complemented by the creamy texture of the peanut butter and the smooth, melt-in-your-mouth quality of the white chocolate. Ingredients

  • 2 sleeves Ritz Crackers, ~60 crackers
  • 20 oz. Ghirardelli white chocolate melting wafers 
  • 1-2 Tbsp coconut oil (optional)
  • 1 cup creamy peanut butter (or nut butter of choice)
  • 1/4 cup festive holiday sprinkles
  • flaky sea salt, for finishing

Instructions

  • Line a cookie sheet with parchment paper and lay out 1 sleeve of Ritz crackers with the flat side facing up.
    2 sleeves Ritz Crackers, ~60 crackers

  • Spread ~2 tsp. of peanut butter on each cracker, I usually just eyeball it and make sure it's a nice thick layer of peanut butter.
    1 cup creamy peanut butter (or nut butter of choice)

  • Carefully place another cracker on top to create a sandwich, with the rounded side up. (2 crackers per cookie)

  • Place the white chocolate melting wafers in a microwave safe bowl and heat until melted. I usually heat for 1 minute, stir and then heat for another minute and stir again. It should be melted and smooth. You can add coconut oil into your white chocolate to help with the melting, but if you have the wafers it's not necessary.
    20 oz. Ghirardelli white chocolate melting wafers , 1-2 Tbsp coconut oil (optional)

  • Once chocolate is melted and smooth, dunk each cookie into the white chocolate so it's coated completely and set back on the parchment paper. I like to use a fork to dunk in the chocolate and be sure to tap excess melted chocolate off. Drizzle any extra white chocolate on top of cookies.

  • Finish the cookies with sprinkles and flaky sea salt and repeat with the remaining cookies. Allow the chocolate to set up, then serve & enjoy!

Notes

  • Use can also use dark chocolate melting wafers instead of white.
  • Store the cookies in an airtight container for up to 1 week.
    You can freeze these Ritz Cracker Christmas cookies for longer storage. Place them in a freezer-safe container for up to 3 months.
