White Chocolate Mousse

This White Chocolate Mousse is an easy yet impressive dessert. It's light, fluffy, perfectly sweet and a great make-ahead dessert.

Top with homemade whipped cream, fresh berries and white chocolate shavings!

To make, place chopped white chocolate in a heatproof bowl and place in the microwave for 30-45 seconds to soften slightly.

Heat 1/2 cup of the heavy cream in a small saucepan until just steaming (not boiling).

Pour over the white chocolate, making sure it is completely covered, and let sit for ~2-3 minutes.

Stir gently to combine until smooth, making sure not to whisk in air.

Stir in vanilla and salt. Set aside & let cool slightly.

Sprinkle gelatin over cold water and let it bloom for 5 minutes.

Then, microwave for 10-15 seconds until melted.

Stir into the warm white chocolate mixture.

In a separate bowl, beat the remaining 1 cup cold heavy cream until medium-stiff peaks form. If using powdered sugar, add it in this step.

Gently fold about 1/3 of the whipped cream into the chocolate mixture to lighten it.

Then fold in the remaining whipped cream in 2 additions until smooth and airy.

Divide into serving glasses and refrigerate for at least 4 hours, or until set.

Top with fresh berries, whipped cream, white chocolate shavings, and enjoy!!
