Mango Mulberry Salad with Honey Mustard Vinaigrette

Ingredients

For the dressing

  • 2 Tbsp. dijon mustard
  • 2 Tbsp. honey
  • 1/4 cup EVOO
  • Juice of 1 lemon
  • dash of pepper
  • 2 tsp. white wine vinegar

For the salad

  • 1 mango peeled and diced
  • 3-5 cups romaine lettuce chopped
  • 1 cup chopped fresh strawberries
  • 1/2 cup blueberries
  • 1 cup cherry tomatoes
  • 1 small avocado diced
  • 1/4 cup chopped red onion
  • handful of mulberries

Instructions

  • For the salad dressing, whisk all of the ingredients together, put in a container, and chill in the fridge until ready for use.
  • For the salad get a large salad bowl and toss together the mango, lettuce, strawberries, blueberries, tomatoes, avocado, and onion. Let sit in the fridge for 30 minutes so the flavors can blend.
  • When ready, top with mulberries and serve with salad dressing.
