Kale Quinoa Salad with Pear Dressing

Ingredients

For the salad

  • 1 bunch of kale chopped
  • 4 cups spinach chopped
  • 4 to matoes diced
  • 1 red onion diced
  • 2 green onions
  • 3 T basil chopped
  • 1 pomegranate seeded
  • 1 1/2 cups quinoa cooked
  • 2 cups chicken broth
  • salt and pepper to taste

For the dressing

  • 1 pear peeled and cut into cubes
  • 2 cloves garlic chopped
  • 1 T dijon mustard
  • juice of 1 lemon
  • 1/2 cup EVOO
  • 1/3 cup white wine vinegar
  • 1 T sugar
  • salt and pepper to taste

Instructions

  • Cook quinoa according to package with the chicken broth instead of water and set aside to cool. Toss together the kale and spinach along with the tomato and onion.
  • While the quinoa is cooling off still you can make the dressing. Using a blender (I used Nutribullet) blend all ingredients together until smooth.
  • Toss the cooled quinoa in with the leafy greens and place remaining ingredients on top. You may toss with the dressing or serve on the side! Enjoy :)
