Cook quinoa according to package with the chicken broth instead of water and set aside to cool. Toss together the kale and spinach along with the tomato and onion.
While the quinoa is cooling off still you can make the dressing. Using a blender (I used Nutribullet) blend all ingredients together until smooth.
Toss the cooled quinoa in with the leafy greens and place remaining ingredients on top. You may toss with the dressing or serve on the side! Enjoy :)
