To make, whisk together the melted butter, dark brown sugar, and granulated sugar until smooth and glossy.

Add the eggs, red gel food coloring, vinegar, and vanilla, and whisk until fully combined.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and espresso powder.

Gradually fold the dry ingredients into the wet ingredients using a rubber spatula or wooden spoon.
