To make, combine the cold cubed butter, peanut butter, dark brown sugar, and granulated sugar in the bowl of a stand mixer and beat until light and fluffy.

Mix in the egg, yolks, and vanilla extract until smooth and creamy, scraping down the sides of the bowl as needed.

In a separate bowl, whisk together the flour, baking soda, baking powder, cornstarch, and salt.

Gradually add the dry mixture to the wet ingredients, mixing on low speed until just combined. Do not over-mix.
