MARYLAND CRAB CAKES
Gently combine the crab meat with the saltine crumbs, scallions and minced bell pepper
add mayonnaise, lemon juice, lemon zest, parsley, tarragon, Dijon mustard, egg, Worcestershire sauce, Old Bay Seasoning and hot sauce in another bowl
whisk to combine
add mayo mixture into crab mixture
refrigerate 1 hour (Chilling the mixture helps to prevent them from falling apart when you cook them.)
while crab chills, whisk together ingredients for the special sauce
mayonnaise sour cream dill pickle relish fresh chives Old Bay Seasoning Dijon mustard sugar
form into crab cakes and roll in saltine crackers
makes 10 (3 oz.) crab cakes. Great for dinner portion. OR make them smaller for appetizer portions
cook in a nonstick skillet, ~3-5 minutes each side.
