Buffalo Chicken Stuffed Bell Peppers

– Cut bell peppers in half & remove the seeds and membrane. Place peppers cut side up in the casserole dish and bake for 15-20 min.

combine the shredded chicken with sautéed onions, jasmine rice, mozzarella cheese, Greek yogurt and buffalo sauce. Mix well

Stuff the peppers to the brim

Top each half with shredded cheddar, cover with foil & bake!

add your favorite garnishes. We like bleu cheese, green onions and more buffalo sauce! (Like Franks!)
