CARROT CAKE BREAD
In a medium sized bowl, mix the dry ingredients together
combine and set aside
press 8 oz. (1 package) softened cream cheese into a bowl to smooth it out.
Then whisk in the eggs, vegetable oil and vanilla extract.
dice up the prunes (or use raisins)
combine wet & dry ingredients
Fold the dry ingredients into the wet until no more floury pockets remain.
Pour into a prepared 9"-x-5" loaf pan and bake
let cool & meanwhile, make the frosting
mix together softened cream cheese, sugar, vanilla and a pinch of salt until smooth.
dollop on top of bread and smooth it out
slice & enjoy!
