Baked bean and cheese taquitos made with seasoned refried beans and gooey melted cheese.

To make, mix the beans, cheese, sour cream, taco seasoning, hot sauce, and salt in a medium-sized mixing bowl.

Place about 2 Tbsp. of filling on the lower third of the tortilla and spread it out, keeping it about 1 inch from the edges so it won’t ooze out.

Roll the tortillas up and place seam side down on the baking sheet. Brush the tops with avocado oil and sprinkle with a little salt.

Bake for 10-15 minutes or until they are crispy and begin to get golden brown.

Serve with desired toppings: shredded lettuce, guacamole, sour cream, diced tomatoes.
