I thought I would blog about one more summer salad before summer officially ends. I will have to be honest though, I am very excited for fall food and not to mention all the holiday cooking! This weeks 1st Quality Produce Farm to Families Box includes sooo many healthy goodies: 

Blueberries, Cilantro, Corn, Cucumbers, Green beans, Green leaf lettuce, Green onions, Mini watermelon, Peaches, Red grapes, Red potatoes, and Yellow squash…YUM! And just to prove how fresh and yummy all of it is take a look for yourself 🙂

These Farm to Families boxes are wonderful because they come with fresh produce that reflects foods that are in season, so you know you’re getting quality produce! Once you get your box it may be hard to figure out what to do with it all. So this week I wanted to share with you all a yummy salad recipe using up some of these ingredients. I like recommending others to enjoy a dinner salad before the main entree because it may prevent you from over eating whatever dinner may be for that night. Plus you are getting a serving of two of veggies in 🙂

It pairs so perfectly with the watermelon. I made sure to get a piece of feta in each bite! haha 🙂 

The dressing was a new creation for me and I loved it! SO delicious. I like to use yogurt in my salad dressings, especially Chobani Greek Yogurt, because it adds in a boost of protein and creaminess without added fat. Watermelon Feta Salad with Blueberry Vinaigrette

Ingredients

For the salad

  • 2 cups Green leaf lettuce chopped
  • 1/2 cup fresh blueberries
  • 2 green onion chopped
  • 1.5 cups cubed watermelon
  • 1/3 cup feta cheese

For the dressing

  • 1/2 cup fresh blueberries
  • 2 T Chobani yogurt plain
  • 1 T honey
  • 2 T EVOO
  • 2 T balsamic vinegar
  • 2 T red wine vinegar
  • salt and pepper TT

Instructions

  1. Chop lettuce into bite size pieces into large bowl. Place diced watermelon, feta, blueberries and green onions on top.
  2. For the dressing: In a blender, blend all ingredients until smooth. Pour over salad or enjoy on the side!
