As most of you know by now if you follow my blog, I am blogging for Bar Method Fresno! This weeks theme is healthy crock pot recipes! So today’s blog post is featuring an amazing slow cooker pork tenderloin. If you have the time to prep for using your crock pot, they really are the most amazing appliances ever. When you are making your grocery list, plan crock pot meals out to make your week less stressful. Nothing is worse than coming home after a long day and thinking, “What are we going to have for dinner?!” It’s probably already too late at this point to run to the store to get ingredients but you want to be healthy and make wise decisions. Everyone goes through this struggle, but it is all about time management and planning…and a perfect opportunity to take advantage of your crock pot!

I used this recipe to make a little tortilla wrap, but you can enjoy this meat several different ways. Heat up some sweet potatoes and make a nice spinach salad…or cook off some brown rice and steam some broccoli for your side dishes. Get creative with leftovers too! Use the pork the next day for a snack with some cheese + dijon mustard, or bring it for lunch on a bed of greens with walnuts and a vinaigrette dressing. I used my jam on this just playing around to see how it would taste…and the combo is incredible. The jam is posted on my blog as well!

Slow Cook Chianti Pork Tenderloin

Ingredients

  • 2 pound pork tenderloin
  • 1 cup water
  • 1 cup Chianti
  • 3 Tbsp. minced garlic
  • splash of low sodium soy sauce
  • dash of pepper and garlic powder

Instructions 

  • Place pork tenderloin in your crock pot with all of the ingredients listed above.
  • Cover and cook on low for 4-5 hours, and then keep on warm until ready to eat. The liquid makes a great au jus as well so don't throw it out! 🙂
