Oriental Coleslaw

I feel like coleslaw sometimes doesn’t get the attention it needs…but this coleslaw is ridiculously good. I wish I had chicken for it because some shredded chicken would also make for a nice oriental chicken salad! Soooo note: if you make this – try with chicken! 🙂 Slaw usually is packed with a bunch of mayo and other things that turn people away…but this recipe will have your guests coming for for thirds and fourths!

I love that capsaicin can have an anti-inflammatory effect on our bodies. I try to include spicy foods in my diet for this reason! 🙂 Another hint in this recipe I just thought of that would be delicious would be to add crushed ramen noodles. It would certainly amp up some of the carbs, but just a little crunch would be tasty!

Ingredients

Ingredients

  • 1/2 head of cabbage chopped
  • 1 cup julienne carrots
  • 1/3 cup rice wine vinegar
  • 2 green onions diced
  • 2 T sesame oil
  • pepper to taste
  • 2 T soy sauce low sodium
  • 2 serrano chili peppers
  • 2 T fresh basil chopped
  • optional: shredded chicken and ramen without seasoning packet
  • 1 T. toasted sesame seeds

Instructions

  • Toss all ingredients together in a bowl, top with sesame seeds.
