Fresh Fig Balsamic with Baked Chicken -

This past weekend my mother and I had a blast at the California Fig Fest! We tried multiple culinary creations from local restaurants and businesses and also got to watch Fabio Viviani in action making fresh pasta! And of course I had to snag a picture with him as well, so that was fun 🙂 

I feel as if many people enjoy figs, but may not always know what to do with them. You will maybe wrap them in prosciutto or slice them on a cheese tray with honey…but I wanted to get a little more adventurous with my figs and create a balsamic that you could eat with chicken, pork tenderloin, pork chops, or any protein source you like! I had a lot of leftover figs to use one day and created this recipe. I hope you enjoy!

Fresh Fig Balsamic

  • 1/2 cup fresh figs quartered
  • 1/2 white onion diced
  • 2 cloves garlic chopped
  • 3 T dark brown sugar
  • 1/3 cup balsamic
  • 1/4 cup water
  • pinch of salt and pepper


  • Place all of the ingredients in a medium sauce pan and bring to a boil. Then let balsamic mixture simmer for ~30 minutes. Remove from heat and let cool to room temperature before storing in fridge.
