Happy Wellness Wednesday! I hope everyone is enjoying their week. Mine has been busy and full of studying and work. During the busy week I sometimes find it hard to have a weeknight meal that is both easy and healthy. I recently bought a large bag of frozen salmon from Costco and it has been such a perfect way for me to include fish in my diet. The salmon filets only take about 15 minutes in cold water to defrost and ~13 minutes in the oven to cook! So if you’re looking for an easy weeknight meal, this pesto salmon is it!
I enjoyed my salmon with some fresh tomatoes from the farmers market and spicy green beans! I cooked the green beans with red pepper chili flakes, olive oil, garlic powder, salt, pepper, and fresh garlic until tender.
- 2 fresh or frozen salmon filets
- 4 Tbsp. homemade or jar pesto
- Preheat oven to 350 degrees F. Defrost salmon if frozen. Place salmon in glass baking dish. Spray bottom lightly with pam. Gently place your salmon filets in the dish and evenly spread your pesto over the tops of the salmon.
- Bake in oven for 13-15 minutes.
