Swoodles (Sweet Potato Noodle)

The spiralizer is one of my favorite kitchen tools!

If you have not purchased one yet, I highly recommend doing so! They are fun to use in the kitchen and can help increase your vegetable consumption by replacing something typically higher in carbohydrates with a veggie!

I usually use my spiralizer to make zoodles **zucchini noodles** but today I opted for sweet potato (mainly because I had so many to use up!)

I used the KitchenAid spiralizer attachment and it works SO well. 

There is seriously so much flavor in this one dish, it is delicious and so easy to make.

The combination of sesame oil and soy sauce compliments the sweet potato noodles so well. I recommend making an Asian chicken to pair with this or even Asian flavored meatballs.

Ingredients you will need for this sweet potato noodles recipe

You probably already have most of the ingredients in your pantry!

  • Sweet potato, large
  • Avocado Oil (Can substitute for olive oil)
  • Toasted sesame oil (doesn’t have to be toasted I just prefer the flavor)
  • Apple cider vinegar
  • Honey
  • Crushed red pepper flakes (optional)
  • Salt
  • Liquid Aminos (or low sodium soy sauce)
  • Mirin
  • Green onions
  • Sesame seeds

Tips for making this Sweet Potato Noodles recipe:

If you are in to meal prepping, you can also spiralize the sweet potato noodles ahead of time, and when you’re read to eat, heat them up and toss with the sauce.

Many times, we get so busy and when we get hungry we can be pretty ravenous! But being prepared can help you make more mindful decisions when it comes to eating!

When using the spiralizer, make sure you center the sweet potato onto the spiralizer. Mounting it on in the center will result in a more even and continuous noodle.

You can store raw sweet potato noodles (with no sauce) in a bowl covered with ice water, up to 2 days, and they can also be frozen!

How to make Swoodles (Sweet Potato Noodle Recipe)

Cook the sweet potato in the oven at 425°F for 10-15 minutes (will not be fully cooked at this point).

While the potato cools off a little, make the dressing!

In a small bowl whisk together the liquid aminos/soy sauce, mirin, sesame oil, vinegar, honey, red pepper flakes, and salt.

Set the dressing aside.

Spiralize the sweet potato into noodles.

In a medium sauté pan heat the noodles with avocado oil for about 5 minutes (I like them slightly crunchy but cook longer, 10-15 min, if desired).

Toss in the dressing, green onions, and sesame seeds.

Serve warm or cold.

Store in an airtight container in the fridge for up 5 days.

Ingredients

  • 1 large sweet potato (large)
  • 1 Tbsp. Avocado Oil
  • 1 Tbsp. toasted sesame oil
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. honey (or maple syrup)
  • pinch crushed red pepper flakes
  • 1/4 tsp. salt
  • 1 tsp. Liquid Aminos (or soy sauce)
  • 1 tsp. mirin
  • 1 green onion (diced)
  • 1 Tbsp. sesame seeds

Note: if you don’t have Mirin, rice vinegar with a little sugar will do the trick! Or, opt out of the sugar since these noodles are already sweet with the honey and ACV.
*Liquid aminos is a soy sauce alternative.

  • vegetable peeler
  • paring knife
  • small mandolin slicer
  • dual julienne peeler & vegetable peeler

Of all of the vegetables I have spiralized sweet potatoes are my favorite! I like how they don’t release a ton of water once cooked- this can dilute a sauce 🙂 These look so yummy!
