Meatless Monday-Avocado Toast with a Twist

Avocado toast has been gaining more and more popularity – and it is exciting! People are choosing to slather their slice of toast with avocado instead of jam or margarine and I think it is great. Some people refer to avocado as “Earth’s butter” because of its creamy texture. I prefer to use the Hass avocado on my toast to get that desired creaminess. Avocado toast is fun because of all the ways you can prepare it: place a poached egg on top, add hummus, add smoked salmon, pomegranate seeds, turkey bacon, heirloom tomatoes – really anything you want! The varieties are endless.

This is perfect for breakfast, lunch, or afternoon snack. It’s healthy, delicious, and will keep you full. Avocados offer so many health benefits – naturally good fats, cholesterol and sodium free, they provide potassium, iron, and fiber all with <1g of sugar. Needless to say, avocado’s are certainly a safe bet. 

I prepared my toast with Ezekiel cinnamon raisin toast, solely because I love cinnamon raisin bread! You can feel free to choose any bread of your liking. The “twist” part to my recipe is including yogurt to make the avocado even more butter-like. Siggi’s yogurt works great if you don’t know what yogurt to choose.

Avocado Toast

Ingredients

  • 1-2 slices bread
  • 1 Hass avocado
  • 2 Tbsp. plain Siggi's yogurt
  • Heirloom or cherry tomato's
  • pinch of red pepper chili flakes
  • pinch of chia seeds

Instructions

  1. Toast bread
  2. While bread is toasting, mix avocado and yogurt in a small bowl. Mash until creamy.
  3. Spread on toast and top with tomato, chia seeds, and red pepper chili flakes.
  4. Enjoy with fruit on the side.
